Delicious almond halwa , that is creamy, rich, and super easy to make this is known as the crown jewel of all the mithais in India.
1 tbsp ghee or clarified butter
2 cups almonds soaked in water overnight and peeled
2 cups evaporated milk
2/3 cup condensed milk
5 to 7 strands of saffron
2 to 3 drops of rose essence (optional)
orange or red food colouring (optional)
pistachios for garnish (optional)
1/2 tsp cardamom powder (optional)
In a blender add your almonds and milk and grind it to the point where it still has little pieces of almonds in it, it should not be completely smooth. In a heavy bottom saucepan add your ghee and melt it, next add the almond and milk mixture and stir it until it thickens, turn the heat to med low and add the saffron keep stirring next add the rose essence and give it another mix for 30 seconds, keep stirring lastly add the condensed milk and if you want you can add food coloring and stir until it becomes thick and starts leaving the sides of the pan add the cardamom and you can now transfer it to a serving bowl and garnish with your choice of nuts.
