A very easy and simple yet deliciously fragrant chicken pilaf
Ingredients:
2 cups rice wash and soak in
4 cups water
3 to 4 potatoes quartered
2 whole chickens cut and cleaned
3 tbsp olive oil
1 tsp cumin seeds
7 cloves
8 black peppercorns
5 whole cardamom seeds
1/2 cup crushed fried onions
3 bay leaves
2 dried red peppers
1 large cinnamon stick
1 tbsp yogurt
11/2 tbsp garlic
11/2 tbsp green chutney
salt to taste
1 tsp lemon juice
Marinate the chicken in
3 tbsp yogurt
1 tbsp ginger and garlic
1 tsp salt
1 tsp black pepper
1 tbsp garam masala
Method:
In a large pot add the oil, once heated add the cumin seeds, dried peppers, cloves, peppercorns, cardamom, cinnamon, and bay leaves let this fry a little so its fragrant before you add the onions and let this fry a little, by frying the onions till they are dark makes a darker pilaf and if you leave it light the pilaf will be lighter. Next add the chicken and stir fry everything really really well and proceed by adding the garlic and green chutney, yogurt, salt, and lemon juice. Stir everything really well until the colour changes a little then add the potatoes and saute it again for a bit, lastly add the water and rice mixture till it comes to a boil, at this time lower the flame to med low and cover tightly for about 20 min. At this time the all the ingredients in the pilaf should be cooked.

2 small cucumbers chopped in small pieces (optional)
1 jalapeno (optional)

cayenne
