Summer comes with great fresh vegetables, here is a twist on some fresh grilled and tasty veggie kabobs…
Ing:
1 small onion diced in 1 inch pieces
1 pineapple diced in 1 inch pieces
1 small red bell pepper cut in 1 inch pieces
1 small green bell pepper cut in 1 inch pieces
1 small yellow bell pepper cut in 1 inch pieces
1 small pkg of button mushrooms
2 to 3 corn on the cob cut in 1 inch pieces
8 to 10 wooden skewers soaked in water
Marinade Ing:
3 tbsp of olive oil
1/2 tsp ginger and garlic
1 tsp green chutney
1 tsp of sambal chutney
1/2 tsp of any cajun seasoning
salt to taste
Method:
Cut all the vegetables and keep them ready, make the marinade and pour it over the vegetables, mix really well, and put it in the refrigerator for about 1/ 2 to 3 hours, depending on how much time you have, the more it sits the more it will soak up the seasonings, make sure and cover with saran wrap. Start skewering them all and put them on a hot grill, make sure and preheat your grill for 10 min before you put them on the grill, after 5 min lower the temperature and let them cook turning now and then for about 7 to 10 min or until the corn is cooked through!
