Delicious no guilt, Keto friendly, low carb and easy bottle guard curry that is super easy to make and delicious. This can be eaten with my low carb bread for a great diabetic friendly meal.
Ing:
2 small bottle guard peeled and cubed
1 tsp fresh ginger and garlic
1 tbsp olive oil
4 to 5 curry leaves
1 roma tomato cubbed in small pieces
1/2 small onion chopped in small pieces
1/2 lemon juice
2 dried chili peppers
1 tsp mango powder
1 tbsp paprika
1 tsp mustard seeds
1/4 tsp turmeric powder
salt to taste
Method:In a pot add the olive oil and once it comes to temperature add the mustard seeds, once they start popping add the curry leaves, ginger and garlic let this saute for 10 seconds then add the onions, tomatoes, and dried chili peppers. Cook this until the onions are translucent and the tomatoes are soft, at this time decrease the temperature and all the dried powders and mix, at the time the aroma should be amazing. Lastly add the bottle guard and mix everything really well and add the salt, at this time lower the heat to between med to low and cover, let this cook for about 10 min or until it resembles a soft cucumber, sprinkle with the lemon juice and enjoy!
Serves about 3 people depending on what you have on the side.
