This is my favorite breakfast what’s yours?
Recipe:
2 eggs
Tortillas (enough to fill with filling)
Fresh mushrooms chopped
Spring onions chopped
Onion chopped
Red and Yellow peppers chopped
Chives chopped finely
Celery chopped
Salt to taste
Pepper
Shredded cheddar cheese (optional)
Olive oil
Method:
Chop all the vegetables, next heat the tortillas in a little olive oil to soften them up, now go ahead and put your eggs in a big bowl and whisk it up, then add the vegetables and seasoning, now add olive oil in the pan, once nice and hot add half of the egg mixture in the frying pan and prepare your tortilla and put the filling in the tortilla and roll it up. Top with shredded cheese if you like.
