A wonderful rice that is cooked with mushrooms and chicken

1 cup frozen peas and carrots
1/2 cup spring onions for garnish
2 tbsp oilive oil
2 cups spinich
11/2 cup mushrooms
2 cups chicken breast cut and cleaned in 1 inch cubes
1 tsp oil for barbequeing
2 tbsp green chutney
1/2 cup onions chopped
1 coal hot
11/2 cups uncooked rice ( please cook it ahead of time)
Method:
In a sauce pan add the 2 tbsp olive oil and ginger and garlic, make sure you fry this a little next add the onions until it is translucent, next add the chicken and salt, mix well till the chicken has cooked through. Next add the frozen peas, carrots and mushroom stir well cook it until the mushroom become a little soft, next add the green chutney and the spinach mix well do a taste test at this time and adjust the taste to suit your pallet. Make sure all the water is evaporated before you add the rice. Finally add the rice stir gently making sure not to break the rice. Make sure your coal is nice and hot put it on foil papper and put it on the rice drizzle the oil on the charcoal and cover the rice for about 15 min.
