Delicious crunchy, sweet, spicy chicken that is super easy to make right at home!
Ing:
2 lbs chicken cut in about 1 inch cubes
Marinate with
salt to taste
1 egg
2 tsp ginger and garlic
black pepper to taste
2 tbsp cornstarch
1 tsp lemon pepper to taste
Vegetable ing:
1 bunch spring onions chopped and a couple springs cut diagonally to garnish!
1 large onion cubed
1 red bell pepper cubed
1 yellow pepper cubed
1 green pepper cubed
2 tbsp olive sauce
4 tbsp sweet Thai chili sauce
1 tbsp sambal or chili garlic sauce
1 to 2 tbsp worcestershire sauce
2 tbsp soy sauce and you can adjust all these to meet you pallet
Method:
in a bowl of chicken add the ginger and garlic, egg, salt, pepper, lemon pepper, and cornstarch mix all the ingredients really well and marinate for at least 20 min. After 20 min heat oil and add the chicken mixture in it and fry till it is cooked through, keep aside. In a big wok add the olive oil, once heated add the 1 tsp ginger and garlic next add the onions and vegetable mixture, I should have not put the sambal in till after, next add the vegetables and stir fry on high for about 2 min then add the soy sauce, worcestershire sauce, sweet chili sauce and the sambal. Stir well add the chicken and serve immediately!
