Ingredients for the Potato Mix
5 lbs of potatoes (peeled and cut in 1 to 1/2 inc cubes)
Enough water to cover the potatoes with 1 inch water on top
salt to taste
Cayenne pepper per your taste
1 tsp turmeric
2 tbsp lemon juice
1/4 cup white all purpose flour
enough water to make a slurry
Fresh cilantro leaves
In a large pot add the potatoes, water and the salt and let is cook until fork tender. Once the potatoes are fork tender add the cayenne, and turmeric stir and make sure everything is really well. Next mix the flour and water to make a lump free slurry, add it to the potato mix and stir continuously until the liquid thickens to a soup consistency.
Do a taste test and adjust the seasonings per your taste.
Garnish with fresh cilantro
