These rotis are soft and flaky and a tasty ground beef makes this dish even more tasty. Dip it in your favorite chutney to complete any snack or meal.
Ing:
1/2 cup olive oil to pan fry
1.5 lbs raw ground beef (washed and drained)
1 tbsp fresh ginger and garlic
1 cube knorr beef stock
1 tsp red pepper flakes
1 tsp cajun seasoning
1.5 tsp lemon pepper
1 tsp black pepper
1 tsp cumin and coriander powder
1.5 tsp garam masala
2 tbsp parsley flakes or fresh coriander leaves
1 small onion diced
2 eggs beaten and added to the ground beef mixture
oil for frying
Ing for the roti:
4 cups white flour
1/4 tsp salt
2 tbsp ghee
1/4 tsp baking powder
1.5 cups water to bind dough
salt to taste
Method:
To the four add the salt, baking powder and salt, mix it then add the ghee or clarified butter and mix it well until you see little that it kind of comes together when making a fist than slowly start adding water to bind a pliable dough and let it rest for about 20 min.
For the ground beef first dry of the beef and than add the fresh ginger and garlic, once you start smelling the ground beef add the bullion and mix it really well, next add all the spices and the parsley flakes then add the onions and mix well, than go ahead and add the eggs in it one and a time and mix it well. Make the balls from the dough this should make 3 really big rotis, or it can depend if you make any small ones. Start rolling out the ball to make a 12 in roti, keep a side and make the same with all the other balls, than add a good amount of mince meat mixture and than cover with the other roti and seal it using a fork. Put some oil in the frying pan, once hot pan fry the parathas until they are golden brown.
