Amrat Paak (A Halva-like Dessert)
Ing:
1 cup Soji (samolina)
1 cup butter or ghee
1 cup ground cashew nuts
1 cup desiccated coconut
1 cup milk
1 cup sugar
1/4 cup half-crushed almonds
10-12 strands saffron
1/4 cup half-crushed pistachios
1/4 tsp cardamom powder
yellow or orange food color
pinch of nutmeg
pinch of salt if using unsalted butter
Poppy seeds (optional for garnish)
Method:
Melt butter in a saucepan than add all the other ingredients except for the poppy seeds. Cook on medium heat, stirring constantly. After 10 minutes, reduce heat to low and cook for 7-10 minutes more, stirring all the time. When the butter starts to separate and the mixture begins to form into a ball (it will slide off the sides of the pan easily), remove pan from the heat and pour the paak into a serving dish. Smooth out the surface and sprinkle with poppyseeds and more nuts. This can be eaten cold or reheated in a microwave…..
