A great flavorful pilaf with just the right amount of spices, soft potatoes and a blend of coleslaw.
Ing:
3 cups of rice washed and soaked for half hour
1/2 onion chipped
5 to 6 whole cloves
3 to 4 red dried chili peppers
4 to 5 whole cardamom pods
1 tsp blend of peppercorns (the blend is optional)
1 whole cinnamon sticks
1/2 tsp of whole cumin
31/2 cups of water
salt to taste
11/2 cups of ground beef (cooked)
2 cups of coleslaw
1 tsp ginger and garlic
2 large potatoes diced
1/4 cup of oil
Method:
In a sauce pan start with heating the oil and adding the cumin seeds, once the cumin seeds fry up than go ahead and add all the other spices and mix well, let these spices fry up in the oil, now go ahead and add the ginger and garlic and stir well making sure not to burn the ginger and garlic. Add the onions and saute them till they are translucent, in the mean time go ahead and peel the potatoes and cube them into bite sized pieces and add them to the pot making sure all the ingredients have incorporated well, next season it with salt, when the potatoes are half way cooked add the coleslaw and stir well than go ahead and add the rice (drained), increase the heat and stir the rice and add the cooked ground beef and the water, once the water starts boiling lower your temperature to the lowest setting and cover, let the rice cook for about 18 min or until the water has disappeared and the rice is cooked, now with a fork just pick on the rice so it does not clump. Serve it with the carrot and mango sambhar!
This can also be eaten with yogurt!
