I can never get enough mangos in the summer so I decided to incorporate fresh mangos and burfi or fudge and the end result was absolutely delicious….
Ing:
4 fresh mangos cubed
8 tbsp unsalted butter
colored coconut optional for garnish
pistachios for garnish
1 cup mango pulp (adjust for sweet taste)
1 cup coconut powder
2 cups milk powder
1 tsp cardamom powder or adjust per your taste
Condensed milk optional if you want to make it sweeter
Method:
In a big pot melt the butter and add the ricotta cheese, stir completely and add the fresh blended mango as well as the mango puree, stir everything really well and give it a taste, at this point go ahead and add 2 cups of coconut powder and two cups of milk powder. This mixture is going to take a good 40 min to thicken. Do a taste and this point if you think the taste is not sweet then add about 7 ounces of sweet condensed milk. Keep stirring and lastly add the cardamom powder and transfer it on a parchment paper in a big tray or a 9×15 size pan. lastly sprinkle with crushed pistachios or coconut powder!
