A really quick and easy ground beef curry with tender potatoes and peas that tastes just like what you get at the restaurant….
Ing:
2 tbsp olive oil
1/2 of a large onion chopped in small pieces
1 tsp turmeric
1 tsp cumin powder
1/2 stick of cinnamon
3 to 4 dried red peppers
1 tbsp garam masala
1 tsp cayenne
2 tbsp tomato paste
2 potatoes peeled and cubed
salt to taste
1 cup green peas
1 tsp ginger and garlic
2 tomatoes pureed
1 cup water optional
2 lbs ground beef
For the garnish you will need
1 tbsp olive oil
2 tbsp store bought fried onions for (garnish)
fresh chopped coriander for (garnish)
fresh lemon juice (garnish) optinol
Method:
Start by pouring olive oil in a hot pan, next add the onion and make sure it fries till it’s golden brown, next add the ground beef and a little water this should help not clump the ground beef. Add the tomato paste so it cooks with the beef mixture. Add the potatoes and peas, stir really well making sure everything is incorporated well, add the ginger and garlic, cinnamon, dried peppers, cumin powder, garam masala, turmeric, cayenne, tomato puree and salt to taste. Mix everything really well, at this point you can see if you want to keep the curry thick leave out the water but if you want to thin it out then add the desired amount of water. Cover and let it cook for about 7 to 10 minutes or until the potatoes are fork tender and the peas are all cooked through and soft. Lastly in a separate saucepan add 1 tbsp of olive oil once hot then add the store bought onions in it and just saute it so it’s nice and crispy. Pour the mixture on the curry and lastly sprinkle with fresh coriander. Can be served with a sprinkle of fresh lemon juice.
