A delicious mom’s homemade ice cream with crunchy almonds and chocolate flavored cookies!
3 cups of crushed cookies, with only one side coated in chocolate
2 tbsp of cocoa powder
1/4 cup sugar
2 egg whites beaten well
3/4 cup of heavy whipping cream
1 cup evaporated milk
1/4 cup cashews
1/4 cup pistachios
For the top layer
1 cup of whipping cream
2 tsp of sugar
1/3 cup assorted almonds for garnishing (optional)
1/3 cup shaved chocolate for garnishing (optional)
Method:
In a big container start adding the ingredients one by one and mx all the ingredients really well, once all the mixture is combined go ahead and add it to a 9 x 13 pyrex dish, and go ahead and put it in the freezer for 20 minutes. In the mean time in a big bowl add 1 cup of whipping cream (mom added 2 cups but I think one cup is enough)
beat the whipping cream and sugar just until its frothy, add this mixture to the top of the ice cream, and to jazz it up any more you can go ahead and add more nuts and shaved chocolate on it!
Stick it back in the freezer for about 12 hours, make sure you cover it really well so it does not get any freezer smell in it!
