This is my go to dish for the days I don’t have much time, it cooks quickly and it can be eaten with rice, pasta, quinoa, and salad. Makes great leftovers as well. This dish has it all, sweet, sour, and spicy.
Ing:
2 tbsp olive oil
1 large onions cut in
1 inch cubes
1 red pepper cut in 1 inch cubes
1 green pepper cut in 1 inch cubes
3 celery sticks cut in 1 inch cubes
3 to 4 carrots cut in 1 inch cubes
1 large can of pineapple tidbits (optional) Sauce

ing:
1 12 oz bottle sweet and sour sauce
2 tbsp soy sauce
1 tbsp sambal or chili sauce
2 tbsp kethup Chicken
1.5 los chicken cleaned and cut in
1.5 inch cubes
1 tbsp fresh ginger and garlic salt to taste
1/2 tsp black pepper
Gluten Free Sauce:
2 tbsp gluten free sou sauce
2 tbsp ketchup
1 tbsp tamarind concentrate

Method: In a big pot add the chicken, ginger and garlic, salt, and pepper, cook this on med high heat until the chicken is completely cooked through, while that is cooking cut up the veggies and keep aside. Once the chicken is completely cooked then transfer the chicken in a different pot. In the same pot add the olive oil and once it nice and hot add the vegetables in it and cook it until you have the desired amount of crispiness, you can cook it more for softer veggies and if you like to have the crunchy veggies then only cook for a couple minutes. Next add the cooked chicken back in the pot, and throw in the pineapple, mix all this really well so everything is incorporated well, if you are making a gluten free version then take some out and keep it aside we will mix the sauce in that later. Add the soy sauce, sambal or hot chili sauce, and the sweet and sour sauce, and ketchup mx well and give it a taste test so it is according to your pallet. Adjust the sauces according to your taste.
Keet this aside and if you would like to make the gluten free version then in a seperate pot add the chicken vegetables as well as the, gluten free soy sauce sauce, tamarind concentrate, sambal, and ketchup, don’t forget to give it a taste test and adjust the sauces according to your pallet.
