A great chicken stir fry with crunchy green beans that can be enjoyed with pasta, rice or quinoa!
Ing:
2 cups chicken cut in small pieces
1 tbsp corn starch
1 egg white
1 tsp ginger and garlic pureed
16 oz green beans steamed but still crunchy
1/2 to 1 onion sliced thin
1 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp oil
For the sauce
1 cup chicken stock
1 to 2 tbsps balsamic vinegreete or black vinegar
1 tsp corn starch
1/2 tsp sesame oil
1 tbsp brown sugar
Method:
Mix the sauce ing together and keep it aside for later use , next marinate the chicken with soy sauce, ginger and garlic, rice vinegar, and the egg white. Marinate the chicken mixture for about 20 min if possible. After 20 minutes heat your wok with the oil and slice up your onions. When the wok gets hot add the chicken making sure not to burn it, once the chicken is cooked than remove the chicken in a separate plate. When the oil starts smoking add the onions and than add the green beans and stir fry until the green beans are crunchy but cooked. while the beans are cooking mix the cornstarch in the sauce, once the green beans are cooked through add the chicken and stir really well than slowly start adding the sauce mixture so the temperature of the stir fry does not go completely down.
