A deliciously refreshing easy, and healthy baked chicken!
Preheat oven to 400 degrees
Ing:
2 whole chickens (cut and cleaned)
2 sticks of unsalted butter (8oz or 16 tbsp)
1 tbsp lemon pepper
1 tbsp ginger and garlic puree
salt to taste
1 lime or lemon zested and juiced
1 tbsp parsley or cilantro flakes (optional)
Method:
In a shallow bowl melt the butter and add the rest of the ingredients except for the chicken. Mix everything well than dip the chicken and put it on a baking tray with holes and make sure you have another tray on the bottom to catch the drippings. Bake the chicken for 30 to 35 minutes or until the juices run clear, lastly broil the chicken till it reaches your desired color and crispness. This can be garnished with more lemon pepper and whatever vegetables you like.
