Fancy potato fritters fried to perfection with a crispy shell and a soft inside that would be a great side dish to accompany a main meal!!
Canola oil for frying
4 to 6 large potatoes thinly sliced
11/2 cup of chickpea flour
1/2 cup rice flour
Pinch of baking powder
1/2 tsp turmeric powder
1 tbsp of dried parsley leaves
1 tsp green chutney (adjust per your taste)
Salt to taste
Enough water to bind the dough
Method: Mix all the above ingredients in a big bowl except the canola oil and potatoes making sure the batter is lump free with a consistency of pancake batter, keep it aside and slice up the potatoes in very thin slices and dip it in the mixture, make sure your oil is hot, start frying it without overcrowding the wok until they are golden brown and crunchy!
