A delicious vegetable dish made with fresh okras then curried with spices and topped with cilantro….
Ing:
3 cup fresh okra
11/2 cups potatoes cleaned skinned and cut to your desired pieces
1 cup onion (chopped)
1 tbsp fresh jalapeƱos peppers
7.5 oz or half can crushed tomatoes
2 tbsp cilantro chopped
2 tbsp tomato paste
21/2 cups oil for frying
1 to 2 tsp fresh ginger and garlic puree
1 tsp mango powder
1 tsp coriander powder
1 tsp green chutney
1/2 lemon juice
1/2 tsp turmeric
3 to 4 dried red peppers
Method:
Heat your oil and add the okra and fry for about 3 to 4 minutes and put it in a plate, next in the same oil fry the potatoes and put it in the same plate as the fried okras. Next heat up another pan and add 1 tbsp of the same hot oil used to fry okra and potatoes. To this hot oil we will start by adding the onions. Fry the onions till the get translucent then add the dried peppers, ginger and garlic, and the green chutney fry this for a little while so the onions get some color, also go ahead and the fresh peppers, and keep frying it. Once your onions have some color go ahead and add the tomato paste and fry that for a little while, now go ahead and add the crushed tomatoes, at this time we will add the spices, the mango powder, turmeric, coriander powder and salt, stir and cover and turn the stove on low till the tomatoes cook and become really nice and soft. After about 5 to 7 min the mixture should look just like a thick curry, the tomatoes should be nice and soft, at this point add bout 1/2 cup water and lime juice. Give it a taste to adjust the salt, next add the okra and the potatoes and gently stir making sure not to break up the potatoes, and now you are ready to serve, I usually serve this dish with curried puris.
