A simple homemade meat and potato curry which has been a family favorite for years!
Ing:
2 lbs no fat beef cut in 11/2 inch cubes
3 cups water
2 to 3 potatoes cubed
3 tbsp olive oil
1/2 tsp salt
1 cup vidalia onions chopped
1 tbsp fresh ginger and garlic
4 tbsp tomato paste
2 large fresh tomatoes pureed
1 tbsp lemon pepper
11/2 tsp cumin and coriander powder
1 tbsp turmeric
1 stick of cinnamon
1 tbsp garam masala
4 to 5 whole red dried peppers
Method:
In a pressure cooker add the oil and let it get hot, then add the onions and salt, let this cook until golden brown, next add the cinnamon stick and the red peppers stir all this really well. Add ginger and garlic and tomato paste, you want to cook this for at least 2 to 3 minutes until it becomes a little darker in colour, next add all the spices starting with lemon pepper, cumin and coriander powder, turmeric, and garam masala, next add the meat and make sure everything is mixed really well, at this time you can add the tomato puree again mix really well now you are ready to add the water, lastly add a bit more salt increase the heat once it starts boiling and cover the pressure cooker and let it blow the whistle 3 times, once the third whistle blows turn it off and wait until it is ready to be opened, don’t force the air to come out at this point the meat should be cooked well add the potatoes and let it low boil until the potatoes are fork tender. Lastly sprinkle with fresh coriander on top and enjoy! Goes well with rice, rotis, pita bread and even bread!
