Soft potatoes with spices that can be topped with your choice of crunchy topping, this is a great appetizer that can be taken to picnics or any get together!
4 large potatoes boiled cut in 1 inch pieces
1 tbsp olive oil
6 oz tomato paste
salt to taste
water (optional for gravy)
8 curry leaves
1 tsp turmeric
1 tsp cumin
2 dried red chili pepper
1/2 tsp cumin and coriander powder
1 tbsp ginger and garlic
1 tbsp mango powder
1 tsp cumin seeds
1 tbsp chili garlic sauce
1 tbsp lemon pepper (optional)
In a large pot add the olive oil and let it come up to temperature a little bit then add cumin, mustard seeds, curry leaves, dried red chilli peppers, and the fresh ginger and garlic, stir a little bit then add all the powdered spices except the turmeric and lemon pepper and mix well, make sure not to burn the spices. Next add the tomato paste, I used 9 oz at this time make sure and cook this mixture really well so you don’t have the raw tomato paste flavor and the mixture has turned a little darker. Add the turmeric and salt as well as the lemon pepper stir everything really well and add a little water, lastly add the boiled potatoes and mix this gently making sure not to break the potatoes.
Do a last taste test to make sure the flavor is satisfying. Cover and let the potato mixture cook for another 2 min so all the flavors get infused with the potatoes.
This can be served with yuka chips, homemade chevro or Indian chex mix, potato chips, potato sticks and any chutney you might like.
