Preheat oven to 400 degrees
10 to 12 large baking potatoes washed and peeled
1 stick unsalted butter room temperature
1/2 tsp fresh ginger and garlic pureed
1 tsp dried chives
1 tsp parsley flakes
cayenne to taste
1 tsp lemon pepper
salt to taste
pepper to taste and top on top of the potatoes
Slice the potatoes half way through making sure not to go all the way through use a guide to help not cutting all the way through than put the potatoes in ice water as this will help open them up a little.
Mix all the ingredients in the butter except the potatoes than soften the butter in the microwave making sure you don’t melt it, and spread it on and in between the potatoes. Reserve some butter to spread on the potatoes after the potatoes are baked. Sprinkle some more pepper on top of the potatoes and stick it in the oven for about an hour or until potatoes are fork tender. Plate the potatoes and garnish with sumac or paprika. Can be served with cheese or cheese sauce.
