Ing:
4 cups white flour
3/4 cup oil for softer richer puris OR (hot)
1/2 cup for more crispy puris (hot)
4 tbsp rice flour
salt to taste
1 tbsp lemon pepper
2 tbsp carom (ajwain) seeds
enough water to bind a nice pliable dough
3 cups of oil to fry the puris
Method:
In a bowl add the flour next add the rice flour, salt, lemon pepper, ajwain or carom seeds. Stir this together really well and make a well in the middle and add the hot oil and carefully mix it slowly making sure you don’t burn yourself, mix it till it resembles a crumbly like mixture, next add the water slowly to bind a nice pliable dough that is not to firm or not to soft dough, let the dough rest for 10 to 20 minutes . After resting the dough make 4 to 5 portions of it and roll them out flat, and using a cookie cutter of your choice. Fry on med heat till crispy and golden brown.
