This is an amazing condiment that goes well with any Indian meal as well as on a sandwich.
There is no measurement for this recipe but I have tried my best to gage the measurement for you, pls do taste test it to according to your pallet!
Recipe from Sakina Salemohammed of Minnesota
Ing:
4 to 5 large carrots peeled and finger cut
1 english cucumber cut the same way (my addition)
raw mango can be added as well
1 whole lime juiced (my addition)
2 tbsp tomato paste
1 tbsp ketchup
salt to taste
1/2 tsp ground coriander powder
1/2 tsp cumin powder
1/2 tsp curry powder
1 tsp fresh ginger and garlic
2 to 3 tbsp olive oil
1/2 tsp cayenne
Method:
Get the carrots, and if using english cucumber, and raw mango ready and keep it aside. In a big bowl add the tomato paste, ginger and garlic, ketchup, salt, lime juice, all the spiced powders, cayenne and oil. Mix all these ingredients thoroughly and do a taste test, make sure the taste it and adjust the taste according to your pallet. Lastly add the chosen veggies and mix it well. This condiment is ready to eat immediately.
This condiment can be stored in the refrigerator for a good 5 days.
