Shish tawook (شيش طاووق) are marinated chicken skewers that are very popular in all Middle Eastern restaurants, they have a mild yet delicious flavor that can be paired with saffron rice, pita, or naan. This dish is a great option for all those that are looking for a keto or low carb option, this is great for diabetics and people that can not tolerate gluten, it can be served with a delicious salad.
Ing:
10 long skewers (if using wooden soak for 20 min)
1.5 lbs chicken breast cubed in 1.5 inches
1 tbsp paprika
1 tbsp black pepper
1 tbsp cumin powder
1/2 tsp coriander powder
1 tbsp chili garlic sauce
1 tbsp fresh ginger and garlic
1 tsp salt
4 tsp lemon juice
2 tsp olive oil
2 tbsp thick yogurt
3 tbsp tomato paste
1 large onion cubed
1/2 red bell pepper cubed
1/2 orange bell pepper cubed
1/2 yellow bell pepper cubed
Method: Marinate the chicken in all the ingredients listed above for about 30 min, I decided to skewer them and let them marinate, prepare your grill if using outdoors or the indoor grill, I set my temperature at 450 and grease your grill and start putting the skewers on the grill and keep turning them until they are white and completely cooked through, serve this with your choice of side.
