sugar syrup:
2 cups of sugar
1 cup of water
1/2 tsp cardamom powder couple drop of rose essence (optional)
1 tsp lemon juice
4 to 5 strands of saffron Get it on the stover on med low until it reaches a 1 thread consistency or 220 degree F turn the stove off and let it cool slightly before we dip the kalimatis inside
kalimati Ing:
1.5 cups of flour
1.5 tbsp cornstarch
1.5 tbsp yogurt
1.5 tsp of yeast enough water to make thick mixture

Method: Make the syrup and let that hang out while we assemble the kalimati batter, use all the ingredients mentioned above for the kalimatis and make a thick mixture. Cover and let it double in size then heat up your oil and take penny size dough in your fingers and drop them in the oil, fry on med low but please make sure and not fry them too much as they will become too hard. Fry till they are golden brown, these can be dipped in syrup right away or you can finish frying them then dip them in the sugar syrup.
