A savory full of spices comfort food that tastes amazing!
Ing:
2 cups haleem wheat
1 cup pot barley
Soak the above overnight and boil with
1 big cinnamon stick
4 to 5 peppercorns
5 to 6 cloves
enough water to cover the wheat, put it in a crockpot and put it on high for at least 4 to 5 hours then turn it on low or you can boil it overnight until the wheat is cooked completely
11/2 cup beef stew cut in small pieces
marinate the beef stew with
2 tsp of ginger and garlic
1 tsp salt
1/2 tsp black pepper
1/2 tsp garam masala
3 tbsp yogurt
Mix it all the above ing with the beef stew and put it in the crockpot, cover and put it on high till it boils, then turn it down to medium and let it cook till the meat is cooked completely, I let mine cook till it was soft and shredded on it’s own. Once it’s cooked let it cool and refrigerate till ready to use.
Once the wheat is boiled you want to blend it using your hand blender until it resembles oatmeal.
For the tempering of the khichdo add
1/2 cup olive oil
1 small stick of cinnamon stick
1 to 2 grinded chilis or green chutney
1/2 cup crushed onions (store bought)
1 tsp ginger and garlic
8 oz crushed tomatoes
6 oz tomato paste
1/2 tsp cumin and coriander powder
1/2 tsp turmeric
1/2 tsp lemon pepper
salt to taste
1/2 tsp garam masala
In a pot add the oil, once a little hot add the cinnamon stick, green chutney or crushed pepper of your choice, stir making sure you incorporate all the ingredients together really well, next add the crushed onions, again mix well then add ginger and garlic, crushed tomatoes, tomato paste, at this point make sure you cook this mixture for at least a couple minutes before you start putting all the spices in there. For the spices start of with cumin and coriander powder, turmeric, lemon pepper, salt, garam masala, and the boiled meat. Make sure and stir all these ingredients really well. Make sure and give it a taste test and adjust the seasonings to your liking. In the wheat add the curried meat we prepared and with your hand blender start mixing it starting with half the mixture then mix everything well and also making sure you have crushed the wheat till you are satisfied with the consistency of the wheat. Do a last taste test and adjust the seasoning to your liking. You want to cover it up again and let it cook for another hour or until you see a little oil oozing out on the top. Adjust the consistency by adding water if needed so.
Garnish with fresh chopped coriander, more fried onions, some fresh lime juice and some lemon wedges……
Makes about 6 quarts which would fit about 15 to 20 people depending on what you have for sides.
