Flakey crispy and soft all in one paratha! Give these a try they are going to be your only recipe. Very delicious and easy to make!
Ing:
2 1/2 cups white flour
1/3 tsp baking powder
2 1/2 tbsp olive oil
salt to taste
1 cup and 2 tbsp water
Method:
Bind the dough by mixing the flour, salt, baking powder, olive oil and water, the dough will be a little sticky it is very important to rest the dough. Drizzle a little olive oil on the dough and cover it let it rest for at least 30 min. After it is rested make four sections and roll them so they are round. Take each round and roll it out to about 10 inches drizzle more olive oil on it sprinkle with white flour, next make three cuts in the rolled flat bread, at this time you should have 4 sections, roll each section and place it on the other strip on the opposite direction and roll again until all the pieces are rolled, gently press down and proceed with the other rounds, this will give the first dough enough time to rest. Once all the dough balls are rolled take the very fist one you had rolled and start rolling them to about 10 inches. Heat up olive oil in a shallow pan once it’s warm enough start frying the paratha making sure to press the middle of the paratha gently with a spatula that is heat resistant and proceed to add more oil on the top of the parathas, this will help separate the layers, turn the paratha over to cook the other side and make sure both sides are nice and golden brown. Once the parathas are nice and cooked pick it up and make sure to drain the extra olive oil and set it on a cookie sheet lined with paper towels to insure that all the extra oil is all soaked up by the paper towel.
