A delicious and fresh tasting chicken topped with even more fresh fruit salsa!
4 to 5 pieces of chicken breast flattened
1 tsp ginger and garlic
1 to 2 tbsp olive oil
1 tsp paprika
1 tsp lemon pepper
1 tsp black pepper
salt to taste
1 tsp cajun seasoning
1 tsp chili garlic sauce
1 tbsp lemon balsamic vinegar
2 tbsp soy sauce
1 tsp lemon juice
1 lemon zest
A little more than 1 cup mango cubed
2 to 3 spring onions chopped
A little more than1 cup chopped tomatoes
1 whole lemon juice
2 avocados dipped in lemon juice to prevent from browning
1 small onion cubed
A little more than 1 cup fresh tangerines cubed
A little more than cup fresh pineapple cubed
Cayenne as per your taste
chopped fresh coriander chopped (optional)
First start with marinating the flattened pieces of chicken with all the marination ingredients listed above and keep it aside then assemble the fruits by combining all the salsa ingredients and keep it aside to marinate give this a taste test and adjust the taste accordingly.
In a pan that has grooves add the olive oil and once it gets hot so you can get a nice sizzle, place the chicken pieces in the pan making sure you don’t overcrowd the pan cook both sides of the chicken. Serve with 2 to 3 pieces of chicken and top it with the fruit salsa and splash it with more fresh lemon juice and if you like you can also garnish with adding a couple slices of lemon on the side.
