Simple and easy way of making a delicious healthy bars filled with jaggery and almonds, a must try!

Ing:
1 lb unsalted butter 1/4 used for melting jaggery
1 1/2 cups or 1/2 lb jaggery
2 1/2 cups wheat flour
1/2 cup chickpea flour or channa nu lot
1/2 cup semolina or soji
2 1/2 cups crushed almonds save 1/2 cup for garnish
1/4 cup desiccated coconut
1 tsp crushed cardamom powder
9 to 10 strands of saffron
1 tbsp white poppy seeds used for garnish
1 1/2 cups of popped gund or edible gum
Method:
In a small bowl melt 1/4th of the butter once melted add the jaggery and let melt slowly, at the same time use a bigger pot to melt the rest of the unsalted butter once melted add the wheat flour, cook the flour for about five minutes then add the chickpea flour and semolina and cook till you smell a great aroma come out and the flour will change the colour to a bit darker. Make sure you keep everything ready so making it will be very simple. Once you feel the wheat flour mixture has cooked well and changed the colour mix the dedicated mixture, cardamom and saffron mixture and keep aside, now add the almonds and mix well, next add the coconut mixture, and the edible gum or gund mix well, you might hear some crackling sounds this only means that more of the gund is popping in the mixture. Lastly add the jaggery mixture and turn of the stove. Quickly mix the mixture really well till it is fully incorporated, pour the mixture in a 10 by 12 pan. Flatten with a back of a steal spoon then use a spatula to even it out. Garnish with the rest of the 1/2 cup almonds and poppy seeds, cut before it cools.
Makes about 48 pieces
