A traditional cookie that get it’s name from the dot in the middle, not so sweet, but crispy and delicious with a cup of tea!
Ing:
2 sticks unsalted butter (room temperature)
1 cup sugar
1/4 cup oil
2 eggs
3 tsp baking powder
4 cups all purpose flour
cardamom (optional)
food color of your choice to make the dots in the middle
Method:
In a bowl add your all purpose flour and the baking powder mix and keep it aside then in another big bowl add your room temperature butter and make sure you stir it well, to that go ahead and add the sugar and beat it well until nice and fluffy, then add the oil and mix. Next add the eggs beat really well again at this time if you want to add the cardamom you can, then add half of the baking powder and flour mixture and mix it with your hand until it resembles a very soft dough next go ahead and add the rest of the flour and mix it really well until it is combined really well, then take about 1/2 a tbsp of 1 tbsp mixture in your hand and roll them so they look like a disk lay them on an un greased cookie sheet and make a light indentation with your index finger and take a chop stick or with your finger make a dot using the color of your choice, bake at 350 degrees for 35 minutes then after 35 minutes turn the oven off and leave the nan khatai in there for another 15 minutes, makes about 40 to 45.
Store in an airtight container
