A wonderful vegetarian dish that uses cabbage that is boiled and than curried!
Ing:
For the wager or the curried part is 2 tbsp oil (I think my mom used too much)
1/2 tsp cumin
1/2 tsp mustard seeds
8 to 10 curry leaves
6 oz tomato paste
2 tsp water pinch of turmeric salt to taste fresh cilantro or dried parsley is fine fresh lemon juice for garnish (optional)
1/2 tsp lemon pepper (optional) For the bhajiya or the fritters you will need 3 cups chic pea flour or gram flour 1/2 tsp ginger and garlic
1 cup chopped onions
1/2 cup yogurt
1/2 tsp lemon pepper (optional) salt to taste pinch of turmeric
1 1/2 cup water or maybe more will be needed to make a thick fritter
2 1/2 cups of shredded cabbage or coleslaw fresh lemon juice (optional) lemon pepper (optional)
Method: Too make the fritters or bhajiyas Add the gram flour in a big bowl so it is easy to stir, next add the ginger and garlic, onions, yogurt, salt to taste, pinch of turmeric, and water. Make sure and stir all the ingredients really well so everything is incorporated fully, she added more flour but I have increased the amount of flour, so you might not need to add more. To the dough add the sliced cabbage or coleslaw and stir well, make sure you do a taste test and if it is fine then make little fritters and drop them in hot water until they raise to the top. I the fritters come to the top that is the sign that the fritters are cooked through, once done put it in a plate and keep it aside and work on making the wager or curried part. For the curried part add oil in a sauce pan and when hot add mustard seeds, cumin seeds, and curry leaves make sure and fry a little until it is fragrant now go ahead and add the tomato paste let fry a little and add the water mix well and add the salt per your taste, and lastly add the cabbage fritters and stir well, garnish with fresh cilantro and a splash of lime!
