A very simple potato curry with not a whole lot of ingredients, but it finger licking good. Have it with puris and you are going to be amazed.
Ing:
5 large potatoes peeled and soaked in water cut in 1 inch pieces
1 to two table spoons of olive oil
1 tsp mustard seeds
1 1/2 tsp mango powder
1 1/2 tsp turmeric
1 tsp cumin seeds
2 red dry chills
1/2 tsp cumin and coriander powder
1 tsp ginger and garlic
1 tsp chili garlic sauce
7 to eight curry leaves
salt to taste
1 6 oz can tomato paste
1 8 oz can tomato paste
1 to 2 cups of water depending how thick you want the curry to be
Method:
In a large pan add the olive oil once a little hot add the mustard seeds, cumin seeds, curry leaves, dry red chillies, ginger and garlic and chilly garlic sauce, stir al the ingredients well then go ahead and add the tomato paste in it and cook it for a couple minutes this will make sure that the paste is not raw. Add the potatoes without the water and mix it well until it is combined well, next add the tomato sauce, turmeric, mango powder, cumin and coriander powder, and salt to taste mix all these ingredients making sure it has incorporated really well. Lastly add the water stir and do a taste test and cover the pan for about 15 minutes or until the potatoes are fork tender. This goes really well with parathas, puris or simple rotis.
