Sweet and sour chicken made with a homemade sauce and wonderful fresh crispy vegetables.
Ing:
2 tbsp olive oil
11/2 cups boiled chicken
11/2 cups onions chopped in 1 inch cubes
11/2 cups fresh pineapple
1 cup celery chopped
11/2 cups carrots chopped in 1 inch cubes
1/2 cup capsicums chopped in 1 inch cubes
1/2 cup yellow capsicums chopped in 1 inch cubes
1/2 cup red capsicums chopped in 1 inch cubes
Sauce:
1 cup brown sugar
1/2 cup regular white sugar
1 tsp corn starch mixed with 2 tsp water
1/2 cup ketchup
1/2 cup black vinegar
1/2 cup rice vinegar
1 tsp white pepper
1/2 tsp ginger and garlic
Siriacha sauce to taste
1/2 cup corn syrup
Method
First mix all the sauce ing starting with the two sugars, ketchup, black vinegar, rice vinegar, hot sauce to taste, ginger and garlic, white pepper, and the corn syrup and salt to taste, you can add soy sauce if you like, stir and cook on stove so that all the sugars dissolve, let it boil once and than transfer back in the same bowl and now start frying the vegetables. Do a taste test, this is the time to add any other flavors you like, lastly add the cornstarch and stir well. In the same sauce pan add the olive oil, once nice and hot add the onions and stir well, next add the pineapple, and all the other veggies, stir fry to your liking as far as how crisp you want your vegetables. Lastly add the boiled chicken and enough sauce to how thick you want your mixture. Let it be on the stove for a while so all the ingredients can combine together, do a last taste test and you can serve it with noodles or rice.
