Tri coloured pasta with loads of veggies and tender beef
Ing:
2 tbsp of olive oil
Marinate 2 lbs of beef slices with
1 tbsp ginger and garlic
2 tbsp of soya sauce
2 tbsp rice vinegar
salt to taste
black pepper to taste
Ing needed to stir fry the veggies
1 tsp ginger and garlic
1 tbsp mustard seeds
3 carrots cut in long thin strips
1/2 a red bell pepper cut in long thin strips
1/2 a yellow bell pepper cut in long thin strips
5 stalks celery cut in long thin strips
1 large onions sliced thinly
4 to 5 spring onions cut about 2 inches long
2 tbsp soy sauce
8 oz box tri colored rotini noodles cooked
1/2 fresh squeezed limes
1/2 cup chopped spring onions to garnish the dish
Method:
Boil the noodles and keep it aside, cut the vegetables and keep that aside. In a big pot add the olive oil once it gets a little warm add the meat pieces in there and stir fry it on high heat, if the meat is not cooked at this point you can cover it and turn the heat on med to the meat gets cooked completely. In another pan add the olive oil and once it gets hot add the mustard seeds once the splutter add the ginger and garlic cook that a bit next add the vegetables starting with the onions, carrots, bell peppers and spring onions saute that for a minute next add the meat and the pasta. Season it with the soya sauce make sure and do a taste test to make sure it is perfect before you add it to the serving dish. Lastly splash it with lime juice and the spring onions….
