A delicious and healthy curried lentils that can be enjoyed for lunch or dinner!
3/4 cup Red Lentils (Masoor Dal)
1/2 cup Green Lentils
Both soaked overnight
4 to 5 Curry Leaves
1 tbsp Olive Oil
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1 cup Tomato sauce
1 tbsp Tomato Paste
Salt to taste
Half a fresh lime for garnishing
2 tbsp Fresh Cilantro for garnishing
1 tsp Cumin Powder
1 tbsp Green Chutney
1/2 tsp Turmeric Powder
1 tbsp fresh Ginger and Garlic puree
Cayenne per your taste
Enough water to your liking for the consistency you like
In a pot warm up the olive oil, once nice and hot add the mustard seeds and the cumin seeds, once they start popping add the curry leaves, tomato paste, stir really well let the paste cook a little than add the seasonings, ginger and garlic, chutney, cayenne, turmeric, and cumin powder. Stir all these ingredients really well than add the tomato sauce and salt give it a taste test and add the lentils, mix it well and add a 1/2 cup water and cover, let it cook for about 7 to 10 min, you will need it on the stove longer if you don’t soak the lentils overnight. Lastly splash it with the fresh lime and coriander and enjoy!!
