Flat bread stuffed with spiced cauliflower that can be served just about anytime of the day, goes great with butter or chutneys.
Ing:
1/2 cauliflower crushed in food processor
2 tbsp spring onions
1 tbsp fresh coriander
1/2 tsp ginger and garlic
1 tsp mango powder
1/2 tsp turmeric
1/2 tsp cumin powder
1 tsp lemon powder
1/2 tsp kashmiri red chili powder
salt to taste
1 tbsp olive oil
Flatbread ing:
2 tbsp olive oil
1 cups wheat flour
1 cup warm water
salt to taste
Method:
In a big pot add the olive oil and let it heat up, once it is nice and warm add the ginger and garlic once it has fried in the oil for about a minute add the cauliflower mixture, spring onions, turmeric, cumin, mango powder, lemon pepper, kashmiri chili powder and salt, mix all the ingredients really well and let it cook for about a minute then go ahead and add the chopped fresh coriander. At this time do a taste test and adjust the spices, keep this mixture aside to cool. In another pan bind the dough and knead it well until it is really nice and smooth. Make sure and rest the dough for 20 min. Make a small roti about 3 inches in diameter, add about 2 tbsp of mixture in the middle and slowly bring the sides up and seal it to make a nice sealed disk. Flatten it with your hand and then very lightly roll the paratha so it is nice and round. In a non stick flat pan add some olive oil and put the paratha on it then top it with just a little more olive oil, let the roti cook until you see some browning on the bottom once you see that go ahead and flip it over and cook the other side, you can turn the paratha over one more time and set it on a serving platter and enjoy it with your favorite chutney or curry or just devour them with a cup of tea!
