An awesome twist to your everyday chicken with a kick of habanero and the wonderful taste of the bell peppers!
Preheat oven to 424 degrees when ready to bake
Ing:
1 1/2 chicken marinated with 1 tsp each of ginger and garlic, 1/2 tsp of green chutney and 1 tsp of lemon pepper
1 large red bell pepper
1 tbsp black pepper
2 tsp of paprika
habanero pepper (use half for milk and whole for spicey)
salt to taste
1 tbsp black vinegar
1 lime zested and juiced
a couple strands of mint
1/2 cup of oil
chopped fresh cilantro for garnish (optional)
Method:
Marinate the chicken and keep it aside, in a blender add the red bell pepper, black pepper, black vinegar, paprika, mint, lime zest, habanero pepper, and the oil. Add the marinade to the chicken and the fresh lime juice, let marinate for at least 24 hours to get the best taste. Put it in a pan and make sure you put it in a single layer and stick it in the oven for about 45 min to an hour, making sure you check on it, depending on your oven. After the chicken is done turn your broiler on and just broil it until it is a little chard…. Can be served with my cheesy potatoes, oriental salad, fresh cucumbers or anything of your choice…
