Ing:
5 lbs white Russet potatoes skinned, and cubed
1 tsp lemon pepper
1 tsp cajun seasoning
1 tsp paprika
4 tbsp unsalted butter salt to taste
Ing for cheese sauce:
4 tbsp unsalted butter
4 tbsp all purpose flour
2.5 cups milk
1.5 cups cheddar cheese
1/2 tsp black pepper salt to taste
Method: Preheat oven at 400 degrees F In a large pan place a piece of parchment paper and top with avocado or any oil to prevent potatoes from sticking, wash and cube the potatoes and place them on the tray, add all the seasonings, slice butter into thin strips top the potatoes. Cover the potatoes with foil and bake for about 20 minutes, take it out of the oven and prick it with a fork if they are tender then put them back in the oven uncovered at 500 degrees to crisp up. For the cheese sauce, add the butter and let it melt, then add the flour and cook this until you have a nice off color mixture, pour in the milk one cup at a time and let it thicken, add salt and pepper as well as the cheddar cheese and whisk it till you have a nice smooth velvety sauce.
