Homemade carrot halwa which is super easy to make and super delicous!
4 cups shredded carrots
2 tbsp ghee
1 tsp cardamom powder
1/4 cups almonds chooped
1/4 cup cashews chopped
1/4 cup pistachios chopped
1/3 cup sugar (might not need all)
1 cup evaporated milk
1 cup whipping cream
4 tbsp powdered milk
pinch of salt
In a heavy bottom pan add the ghee and let it melt, once completely melted add the shredded carrots and saute them for about 5 min this helps the carrots from becoming mush next add both the milks cover the mixture for about 20 min. After 20 min add the cashews, the milk powder and stir well cover and let it cook for another 10 to 15 min now you want to cook this mixture until all the liquid is evaporated, add the cardamom and sugar, give it a taste test and add sugar very slowly lastly add the pistachios and a pinch of salt. Garnish with more pistachios and sliced almonds
