Delicious, soft, fluffy homemade healthy almond flour pancakes with a hint of vanilla that is for sure going to hit the spot.

2 eggs
1/4 cup almond milk
1 tsp vanilla
1 tbsp Lacanto maple syrup or your choice of sweetener
1 cup almond flour
1 tbsp olive oil
2 tsp baking powder
1 tbsp flaxseed mealpinch of salt
Method:In a bowl crack the eggs and whip them a little then add the vanilla, olive oil, and the almond milk, next add the dry ingredients starting with the almond flour, flaxseed meal, baking powder and the pinch of salt, combine all these ingredients until you have a nice homogeneous mixture, lastly add the maple syrup in it if you decide to use it.. Leave the mixture for about 15 min then heat up a frying pan and add just a little bit of olive oil, once the olive oil gets a little warm add enough better to make whichever size of pancakes you want to make, you can even make mini pancakes as well. Make sure and cover the pan so the mixture cooks in its own steam which results better to give them the rise and make them fluffy. These go really well with a dalop of whipping cream and butter, don’t forget the syrup!Enjoy!
