Method Preheat oven at 325 Cream butter and sugar with a wooden spoon, no mixer needed, next mix the flour and cornstarch together before you add it to the creamed mixrure, next add in the vanilla and a pinch of salt, combine all the ingredients until all the ingredients are mixed really well and you have a dough that does not stick to the hand when touched. With an ice cream scoop drop each scoop onto a baking tray lined with parchment paper and make an indent in the middle, you can use some flour to dip your finger in the flour to make the hole, make it big enough so you can spoon about 1/2 tsp jam in the middle, you can make different shapes as well. Stick them in the oven for about 15 to 18 minutes with a very light browning on the bottom. The first day they will be very soft but by the next day they will be more set, enjoy with a cup of chai or coffee. Makes about 25 depending on the size of cookies you make.
