This is a delicious healthy stir fry using quinoa, this is a low carb option that can be added to your diet and can also be great option for those lunch boxes!
1 tbsp olive oil
1 cup onions diced
4 oz shitaki mushrooms chopped up
4 oz button mushroom chopped up
1/2 cup bell peppers (3 variety to add colour)
1/2 cup celery chopped including the leaves
1 cup diced carrots
1.5 cups of coleslaw
1 cup red quinoa
1 cup white quinoa
2 eggs
2 tbsp of soy sauce
salt to taste
black pepper
Heat a wok and add the olive oil once hot add the all the ingredients except the quinoa and the coleslaw, and stir fry it on high for about a minute, I like my veggies crispy. Make a well in the middle and add the two eggs in it and just mix it right in the middle make sure and season the eggs with salt and pepper, once the eggs are cooked add the coleslaw mix and again just 30 seconds stir fry on high. Lastly add as much quinoa in it, you can use all the quinoa or save some for another dish, add some soy sauce in it and make sure do a taste test and adjust the seasonings to your liking. You have a healthy home cooked meal in no time!
