A delicious creamy pepper steak that can be eaten with quinoa, pasta or rice
2 tbsp olive oil
2 lbs beef stew cut thinly in long strips marinated in
2 tbsp soy sauce
1 tbsp ginger and garlic
salt to taste
1 tsp black pepper
1/2 red bell pepper cut in long thin strips
1/2 orange bell pepper cut in long thin strips
1/2 yellow bell pepper cut in long thin strips
8 oz button mushrooms cut thinly
2 tbsp fresh cilantro or coriander chopped
1 tsp garlic
1 cup heavy whipping cream
salt to taste
In a large sauce pan add the one tablespoon oil and heat it a bit and add the steak and stir fry, if meat takes longer to cook then cover and let cook till it is nice and tender. If you have gravy remaining then save it for later use. Empty the steak pieces in a different plate and put olive oil and saute the mushroom really well, once done add the meat back in and stir fry that for about meat next add the bell peppers in and stir fry only for about 30 seconds making sure not to overcook the bell peppers. Next add the gravy, the fresh coriander and the whipping cream increase the heat a little mix everything really well and the fresh garlic and wait till the sauce thicken up a little, garnish with more coriander and sprinkle some black pepper on top and enjoy!
