3 egg whites at room temperature
1/3 cup erythritol
2 cups of dried shredded coconut Preheat oven at 320
Method: Whip the egg whites until they have a stiff peak, add the sugar and fold the mixture carefully, next add the coconut and fold again making sure not to deflate the egg whites until the mixture is mixed together really well, next make small balls and place them on an ovenproof baking sheet and put them in the middle rack of the oven and bake them for about 17 to 20 minutes making sure they are nice and golden brown. Take out let cool and enjoy!
