Healthy shrimp spring rolls rolled up with fresh herbs and shrimps!
25 shrimps that are de veined with the tail removed
Spring roll sheets
Ends of spring onions for garnish
3 cups shredded lettuce
Fresh mint leaves
Fresh Coriander leaves
Fresh lemon basil
soy sauce
splash of olive oil
splash of fresh lemon
Boiled vermicelli or noodles drained
salt to taste
green chutney to taste
lemon pepper to taste

Marinate for the shrimps:
splash of a good quality soy sauce
fresh ginger and garlic paste
dash of lemon pepper
green chutney to taste
Salt to taste

Ing for the filling:
2 cups fresh shredded Lettuce
1 cup cooked vermicelli or colorful pasta
Fresh mint leaves
Lemon pepper
Green Chutney to taste
Fresh lemon
Fresh Coriander
Fresh lemon basil
marinate this mixture while you assemble the filling
In a big bowl add about 3 cups fresh shredded lettuce, noodles, rub the olive oil and noodles to keep them from sticking, now go ahead and chop up all the fresh herbs and add it to the mixture as well as the lemon pepper, and salt and a splash of fresh lemon juice. Lastly cut the spring onions in long 3 inch thin strips. Mix all the ing together and let the mixture rest for about 10 min now you are ready to assemble your spring rolls.
Soak the sheets in water till soft, stuff with the mixture and 1 to 2 shrimps on top and roll don’t forget to add the garnish in between it.
Quick Sauce:
Fresh chopped ginger
1 tbsp honey
1 tbsp of waster shire sauce
1/2 tsp of balsamic vinaigrette
1 tsp soy sauce
a splash of fresh lemon
and a dash of black sesame seeds
stir and enjoy with the spring rolls
