Soft and springy makate or rice cake broiled until crispy on the outside yet nice and soft in the inside, a great snack with a cup of coffee or chai!
Recipe:
2 tbsp canola oil
2 cups rice washed and soaked overnight
9 tbsp sugar
11/2 tsp yeast
2 tbsp ghee or oil
2 tbsp milk
ground cardamom (optional)
17.5 oz of coconut cream
Method:
Wash the rice in hot water and drain completely, put all the ingredients in the blender and blend the mixture until the mixture is not grainy, make sur you do a taste test and more sugar if you like then pour the mixture in a big bowl, cover it with saran wrap and leave it to raise, in the meantime turn your oven on to broil.
In a frypan add about 1 tbsp canola oil, mix the mixture and wait until the pan is nice and hot, pour the mixture into the frying pan this should be on med high temp, once the outside edges are a little done and there is more bubbles visible very slowly transfer the frying pan into the oven under the broiler, for about 5 minutes or until it is nice and golden brown let rest, transfer it on a metal rack and cut into pieces!!
