Delicious and very tasty cabbage rolls that are steamed to perfection
Ing:
1 whole cabbage (steamed) and leaves removed
For the sauce
1 tbsp olive oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp fresh ginger and garlic puree
6oz tomato paste
salt to taste
3 tsp black pepper (optional)
15 oz of tomato sauce
30 oz of water
For the stuffing you are going to need
11/2 pound ground beef (very lean)
1 cup cooked rice (more can be added depending on your preference)
1 tsp ginger and garlic puree
salt to taste
1/2 tsp gharam masala (optional)
11/2 tsp lemon pepper
1 tbsp olive oil (omit if the ground beef has fat in it)
Mix everything well and keep aside for about 20 minutes
Method:
First steam the cabbage and separate the leaves and set it aside
mix all the ing of the stuffing and let rest for about 20 min
while the ground beef is marinating start making the sauce.
For the sauce, add the olive oil in a saucepan and when semi hot add the mustard seeds, cumin seeds, ginger and garlic, let the spices roast and infuse than go ahead and add the tomato paste, let it cook in the olive oil until it changes color, next add the salt to taste, pepper, tomato sauce and water. Cover and let cook until it reaches your desired consistency. While the sauce is simmering prepare the stuffing with mixing the ground beef, rice, ginger, garlic, salt to taste, gharam masala, lemon pepper and the olive oil. Mix everything really well making sure all the ingredients have incorporated well, let this mixture marinate for about 20 min. Start stuffing the cabbage leaves with the mixture and roll them up, keep them aside once your sauce is done, put half of the sauce in a heavy bottom pan and lay the stuffed cabbages tightly in the pan add 3/4 of the remaining sauce on top and cover, let the rolls steam for about an hour, making sure the meat is cooked through. Lastly lay the rolls in a dish and finish it off with rest of the sauce…
