Ing:
2 whole chicken cleaned and cut in 8 pieces
1/3 cup olive oil
2 tbsp fresh ginger and garlic
1 cinnamon stick
2 dried red chili peppers
1.5 cup or 1/2 packet of my curry starter kit
2 tbsp tomato paste
2 tbsp paprika
2 tsp Kashmiri chili powder
1 tsp cumin powder
1 tsp garam masala
1 tsp cajun seasoning
1/2 tsp turmeric
1 tsp black pepper
1 tsp salt or to taste
3 to 4 potatoes skinned and cubed enough hot water to cover the chicken Method:
Cut and clean the chicken and keep aside. If you don’t have your curry starter kit ready then prepare the mixture and keep that aside as well. In the instant pot add olive oil and turn the sauté mode on, once it comes to temperature add the fresh ginger and garlic and let it cook for a couple seconds then go ahead and add the cinnamon stick as well as the dried red chili peppers, sauté this to release the aroma for couple seconds then go ahead and add the starter kit, this mixture comes to about 1 to 1.5 cups. Let this come to temperature and once hot add the tomato paste, this mixture should cook for about 2 min to make sure you don’t have the raw taste of tomato paste, add lastly add all the powdered spices as well as salt, mix thoroughly and give it a quick taste test and adjust your seasonings. Lastly add the chicken in there and make sure and combine all the ingredients well and add enough hot water to cover the chicken, stir and cover the lid. Set the instant pot to manual for 12 min with a slow release of 2 min. Open when done add some more water if you want more gravy and add the cubed potatoes in it, change the setting to sauté and cook till potatoes are fork tender.
Lastly you can add chopped fresh coriander on top.
Do a last taste test and adjust the taste accordingly to your pallet.
