A blend of millet flour, spinach and millet flour that not only tastes amazing but is really good for you!
Ing:
2 cups millet flour
1/2 cup wheat flour
2 tbsp olive oil
1/2 to 1 cup spinach depending on how much spinach you want in it
2 tbsp yogurt
1 tsp ginger and garlic
salt to taste
pinch of baking powder
cayenne per your taste
1 tbsp fenugreek leaves (optional)
1/2 tsp turmeric
1 tbsp lemon juice
2 to 4 tbsp jaggery dissolved in 1/3 cup hot water (depending on how sweet you want to make it)
Method:
In a big bowl start adding the millet flour, wheat flour, olive oil, spinach, yogurt, ginger and garlic, salt, baking powder, cayenne, turmeric, and lemon juice, start mixing these ingredients slowly then start adding the jaggery water and bind the dough so it’s a nice soft dough. Make small ball and use a tortilla press to make them into a 3 to 4 in disks or just flatten them with your palms and use some water to help them from not sticking to your hands. Pan fry them oil until they are nice and golden brown.
